Henry County’s Cooking
with Vintage Vicksburg

  This week our recipes come from the cookbook Vintage Vicksburg ~ A Collection of Recipes from the Junior Auxiliary of Vicksburg, Mississippi. This wonderful book was a gift from Times’ friend and previously featured cook Faye Miller. I am really looking forward to reading this book and trying out lots of the recipes!

 

Quick French Onion Soup

5 large onions, thinly sliced
1/4 cup butter
4 (10.5 oz. cans) beef broth
1 1/2 cups water
French bread, thinly sliced
Mozzarella or Swiss cheese

  Sauté onions in butter for 15 minutes. Add beef broth to onions and butter; add water and simmer for 1 hour or longer. Put soup into ramekin or small cup. Place slice of French bread on top of serving. Add cheese slice. Brown under the broiler. Yield: eight (6 ounce) servings.
