Henry County’s Cooking with the vidalia onion festival

 

  The 36th Annual Vidalia Onion festival is going on in Vidalia, Georgia April 18 - 26. This week we are printing some of the winning recipes from past festivals. We hope you enjoy.

Sweet Onion BBQ
 Russ Bell

4 Tbsp. unsalted butter
1/2 cup minced Vidalia onions
2 cups ketchup
2/3 cups firmly packed light brown sugar
1/2 cup yellow mustard
1/2 cup cider vinegar
2 tsp. Worcestershire sauce
1 tsp. Tabasco sauce
1 Boston butt, 4 to 5 lbs. chopped
Minced Vidalia onions  

Sauce

  Over medium high heat, melt butter and cook Vidalia onions until translucent. Add all remaining sauce ingredients and bring to a boil. Reduce heat and simmer for about fifteen minutes. Set aside and allow to cool.

  Prepare Boston butt by seasoning with salt and pepper. Grill at 300º for about six hours (meat should pull apart easily). Chop the pork and add sautéed Vidalia onions. Mix in BBQ sauce and serve.
