Henry County’s Cooking
with Norma’s recipes

Special photo

By Mickie Jackson

In the September 18 edition of the Times, our Inside Henry page featured Dr. Gene Crumbley of McDonough. Crumbley has published a cookbook to honor Norma, his wife of 58 years, who passed away in 2011. Inspired by so many requests for her delicious recipes, Crumbley used both his and Norma’s favorites in the book and also included stories of their lives together. Here are a few recipes from the book, but I encourage you to pick up a copy to enjoy and treasure. Norma’s Recipes can be found at McDonough stores: Bliss, Emily’s Attic (Tina Derrick’s booth) and Moyes Pharmacy, or you may call Dr. Crumbley at 770-957-3286.

Southern Pecan Pie

6 eggs beaten
2 cup sugar
1 cup Karo syrup, white
1 tsp. salt
6 Tbsp. softened butter
2 tsp. vanilla
2 cups pecans, halves or chopped, (I liked them chopped fine and she always did that just for me).

Mix all ingredients together in a bowl with a whisk, in the order above, including the nuts. Pour into 9 inch uncooked pie shells. The nuts will rise to the top when pie is done. Bake at 325º for 45 minutes.
