Henry County’s Cooking
with The Divas of McDonough

 

This week we are cooking with The Divas of McDonough. The Divas met several years ago through programs offered by the Heritage Senior Center, and they now meet for cards, food and various outings.

  Years ago, they decided to forgo the usual exchange of birthday and holiday gifts, and pool the amount normally spent on these gifts into a fund which could be contributed to a charity to be selected at the end of each year. Thus far, they have raised funds and contributed to Connecting Henry, Noah’s Ark, Henry County Cancer Services, and have decorated pumpkins for distribution to a local personal care facility.

 The Divas of McDonough served as ambassadors for the merchants on the Square celebrating the first Ladies Night Out, and they continue to look for ways to remain actively involved in their local community.

  The membership of the Divas of McDonough consists of: Aurora Eross, Doris English, Geleta Fenton, Hazel Jinks, Margie Loftin and the founding Diva, Mary Cohen.

  Below are some of the recipes the Divas use when they get together. We hope you enjoy.

Baked Potato Bites

Diva Doris English

1 or 2 raw baking potatoes
2 Tbsp. olive oil
1 cup grated cheese
1/2 cup Bacos Bits 

  Cut potatoes into 1/4 inch rounds. Place on greased cookie sheet. Brush with olive oil. Bake at 350º for 20 minutes. Turn off oven. Sprinkle cheese and Bacos on potatoes. Return to (off) oven and keep warm until guests arrive.
