Henry County’s Cooking

with Rhett and Joyce Bridges Paul



  Our cooks this week are native Southerners. Rhett was born in Savannah and Joyce, in Atlanta. They have been married for 10 years. Rhett has three sons. Joyce has no two-legged children. Read all about this McDonough couple and try out some of their great sounding recipes that they have shared with us!

Career:

 Rhett is a Registered Pharmacist and is retired from the State of Georgia. He currently works part-time relief at Moye’s Pharmacy in Hampton. Joyce is a Registered Nurse and is also retired from the State of Georgia. She currently works part time for Weight Watchers at meetings held in and around Henry County.

Hobbies/Interests:

 Rhett loves all kinds of gardening but excels at vegetable gardening. He has huge, prolific summer, fall and winter gardens. He calls himself a “Gentleman Farmer.”

Cherry Tomato
Caper Salad
 

2 Tbsp. Balsamic Vinegar
1 Tbsp. drained small capers
4 tsp. good olive oil (EVOO works well here)
1/2 tsp. ground black pepper
1 pint cherry tomatoes, halved
6 fresh basil leaves chopped into small pieces (more or less to taste)
Bibb lettuce leaves (optional)

  Combine first 4 ingredients. Drizzle over cherry tomatoes and toss to coat. Let stand 15 - 60 minutes. Sprinkle basil over tomatoes and serve atop lettuce leaves. Notes: We use both red and yellow cherry tomatoes and serve in a small bowl without the lettuce leaves. Chill for about 20-30 minutes before serving.
